doughed in a bit hot but cooled within a couple minutes to 154. PH appeared to be about 5.0 at start of mash. temp stayed at 154 for full 60 minutes. PH appears to have risen to 5.2-5.4. hard to tell on test strips due to dark color of beer |

notes while racking to keg. very roasty aroma no chocolate in aroma. seems to be a pepper spicy note in aroma. no sweetness in flavor. very low roast flavor. oily. no choc in flavor. good spiciness to finish from peppers. |
