Notes

This beer is perfect for winter - malty and warming. I put the cocoa powder in the mash to give it longer to impart flavor. Create a vodka tincture with the cinnamon stick, nutmeg, and clove, and added to taste when bottling or kegging. It lets you control how much of those holiday flavors you want in your beer. At first, I didn't add much, but I found that I like it so I added more the second year.
