Notes

• Mash target pH is slightly low. This is to aid with the color of the butterfly pea flower powder when added later.

• Add cacao nibs toward the tail end of fermentation.

• Add butterfly pea flower powder a day after adding the cacao nibs.

• Add coffee beans to fermenter before cold crashing. You'll basically be cold steeping the beans to get the notes without the bitterness or color. Take taste samples daily to ensure it doesn't get too coffee flavored.
