Juneteenth Brew! Started around 11:30am after a nice bike ride with JeanBean. NB recipe predicts OG of 1.048, but Brewers Friend says 1.053. Major temperature stratification in the kettle. Top measures 140F and probe in bottom measures 167F. Supposed to be 150F throughout. Leaving the lid on pretty much fixed it. Started with 7 gallons.

Gravity is too low. Will need to add DME to the boil. To raise OG by 10 points, I’ll need 22 ounces of DME. I only have 17, so that’s what I’ll add. Took lid off for final 45 minutes of the boil to try reduce volume and raise gravity.

Gravity came up nicely to reach the recipe target. Quite a bit of flakes in the wort (rice hulls?). Hope it doesn’t clog the chiller! Discovered hole in my bag, hence the excess solids.

Hit target with the help of added DME. Wort tastes great! Minimal if any bitterness. Oxygenated for 30 seconds, then pitched a package of Lutra Kveik OYL-071. Wort temp is 77F.

Still have not seen any bubbles in the blow-off tube after nearly 3 days! What is going on! Checked yeast package and was packaged on March 29, 2021, well within the 90-day freshness window. I don't think I did anything wrong with this brew, so why isn't it fermenting?? Wort tastes quite sweet. Not sure if this beer will finish, or whether I'll like it. I also wonder whether adding the DME made it too sweet?
