strike temp was 162, mash started at 152 and ended at 148. pH was 5.24. strike liquor pH was 6.3. grain temp was 62 and mash tun heated to 122. |

ran whirlpool for 15-20 minutes. Used plate chiller with copper coil in ice as prechiller. got temp down to 72 then pitched 1 pack of verdant ipa yeast from lallemand. oxygenated with pure O2 for 30 sec. ferm chamber setpoint is 66.2
Cleaned everything up. |

bubbling like crazy so no way the gravity is 0.996. Took sample and it was at 1.030. Updated plaato. Tasted beer and it was really good.
had a slight dark chocolate taste and bitterness had come down but it's still bitter. I like it. |

We got very close to 54 bottles (if we hadn't spilled any we would have for sure). Nice roasty flavor, no off flavors. bitterness was there but not overwhelming. |
