Gravity had been holding steady for approximately 18 hours so I took a proper hydrometer reading. Hydrometer and temp were right in line with the Tilt. Decided to add a teaspoon of amylase enzyme to try to boost the gravity another point or two.
Taste is on par for the style. There’s possibly a hint of maple flavor but it’s minimal if so. The beer is really smooth, no acrid bitterness. Not sure how much of that can be attributed to cold steeping the chocolate malt but perhaps we’ll get a better idea once carbed and kegged. |

Gravity has been slowly dropping due to amylase enzyme. Decided to start crashing before it dries out too much. Flavor is the same as last sampling; very smooth, typical roasty flavor with zero astringency, maybe a hint of maple flavor.
Added 4 ounces of whole coffee beans before crashing. Looking forward to kegging and serving this one. |

Gravity appears to have dropped another point while crashing. Amylase enzyme for the win!
Kegged a full 5 gallons. Did a taste test with the maple flavoring and decided that 2 ounces would be a good amount to use in the keg. The flavor in the sample was noticeable but not overpowering. Coffee flavor was also present and not overpowering, though it was arguably more aromatic than flavorful. I think 4 ounces of whole bean added before crashing is a perfect amount.
I’m very happy with this batch and look forward to pouring it in a few days. |
