Such a smooth brew day.
Mash with chunks of pumpkin flowed really well from minute 1 and at a high flow rate.
Ran clear after approx 10 mins
Mash temperature maintained at 67oC without deviation for 1 hour.
Chilled to 22oC in 11 mins
Yeast pitched (NBS 2x Classic English Ale Yeast - Malt Miller) - slow bubbles after just 30 mins.
Placed in Fermentarium at 22oC to ferment.

fermentation has really slowed after a ferocious start. Just a few bubbles every few seconds.....I wonder if fermentation has stalled? Will watch over the next 24-48 hours |

very little bubbling now (less that a couple of bubbles every 10 seconds or so) - so expect we're at terminal given the gravity reading.
Set the Fermentarium to chill to drop out the yeast....will trub out and package kegs later today. |

First taste of the young beer is very encouraging. Nutmeg and pumpkin come through as an initial flavour. Some subtle clove notes in the background.
Still a bit hazy - but this beer wasn't fined. Will be good to see it clear over the next couple of weeks. 3rd version of this seasonal ale, and just as good as the first 2 batches. Top Brewing! |
