Mashed in with 176 degree water (with half the oats) and temp came in at about 158, two points above required 156. Left lid off for a few minutes to drop it to 156. Mashed for about 15 minutes at 156 and then added the final 2lbs of oats. Temp dropped to 151. Added a quart of boiling water and temp came back up to 154. Left there for balance of mash. |

Cooled to 60 and pitched yeast. Set into fermentation chamber and will bring temp up to 63 today and to 64 tomorrow. |

The coconut clogged up my transfer hose after about a gallon. Tried a separate siphon from the top and it also got clogged. Had to cover top of the Big Mouth fermenter with a double layer hop bag and gently poured it into a 5 gallon bucket. Then transferred into the keg. Lesson: Put the damn coconut into a mesh bag in the secondary!!!
Good news... the beer smells and tastes spectacular! Coconut comes through strong on the nose and flavor. Can't wait until this one is carbonated. |
