Notes

Ah, crissy arvo… food coma kicking in is only eclipsed by the moment the Pavlova lands on the table. Proud relatives are asking for dismally small slices, but not Al. He carefully eyes-off the geometry of the 'Pav' as each slice is taken - where does one literally draw the line in the meringue without giving the impression of being a bottomless pit?!

Trusting that many more Pav-loving home brewers face this situation each Christmas, developing this recipe was absolutely a labour of love whilst riding on light beams made up of Australian Crissy nostalgia – the result is a beer that pairs succinctly with the mighty Pav’.

Tasting notes of left over meringue mix straight from the mixing bowl, passiona in plastic cups by the pool, lime milkshakes, strawberry lip balm, spritely mango sorbet acidity, crunchy maillard meringue tips.
