pH was 5.5 at about 20 minutes into mash. Added 3ml of 10% phosphoric acid and retested after stirring and circulating. pH dropped to 5.4. Will let it ride there. Just noticed mash pH per recipe should be 5.63. Thought it was supposed to 5.2 always... |

Forgot to capture OG sample. I calculated difference from recipe pre-boil target of 1.054 (54) and recipe FG target of 1.066 (66)
and came up with .818 as a difference factor. I took my post mash gravity of 1.059 (59) and divided by .818 to get (72) or 1.072.

Moved it from carboys to 10 gallon bourbon barrel. Was surprised the gravity wasn't lower. Will leave the batch in the barrel for few weeks and then test again for gravity. Target is 1.016, so with probably get close with a few more weeks time.
