Gravity was low at 1.048 needed to be at 1.060. Next time I do a 10 gallon batch I will drop teh efficiency. MAy be lower efficiency due to the wheat and the spelt. Boil formed a crust on top was weird. Boiling extra to raise the Pre boil to hit my target gravity. |

Hit the gravity less beer than I wanted. THere was a lot of protien break from this in the kettle a lot transfered to the fermenter on the second fermenter. Never seen this before looking foraed to seeing this yeast rip into these fermenters. |

Came out of the fermenter and had a slight flavor or pear/fruit. Much more approachable than the keptins beer yeast. Could tell that thee was minimal hops in this would need bitterness if we were going to drink this with out the barrel aging. |
