This came out pretty good. While I thought it was good, I think I was too focused on the color that I was trying to achieve and did not achieve my ideal Octoberfest. This came out almost like a Bock style beer. The caramunich III was a bit much I think. If I were to make this again, I think I'd go with caramunich I or maybe even a lighter crystal.
A Marzen should finish crisp and clean, leaving you wanting another sip. This definitely had some lingering sweetness to it and a little bit of toasted flavor.
Overall a good beer.

Swapped Munich 10L for Munich 6L.
Swapped Caramunich III for Caramunich I.
Reduced amount of Caramunich from 6.5% to 4%.
Update 10/06/2021: The changes made above were not drastic enough to get where I wanted it. It's still a solid Oktoberfest, but still a touch too dark. Was hoping the changes in the grains would have lightened it up more. Definitely tastes good and it cleared up MUCH better than last time, but still needs a few tweaks. Next year I may drop the Midnight Wheat altoghether. The sideways pictures are the 2021 example.
