Began brewing a few years ago from kits and enjoyed doing it but wanted more control over the finished product. Did a couple of malt extract brews but decided to do some full mash. Have recently bought a bulldog brewer system which is great and I'm getting to grips with using this.
I've brewed all sorts in the past from wheat beers to stout but I prefer lighter brews: pale ales, IPAs, lighter bitters etc. All my beers are named after birds! I don't know why. I think it started when someone tasted one of my concoctions, liked it and said something like 'that's good, especially in hot weather: in Summer it would be gone in two swallows' so I called the stuff 'Two Swallows'!
