So I tapped kegs of Shady Bohemian AND Shore Leave last weekend. After going through several different Pilsner malts in Shady, I think I've settled on Sedeko Bohemian Pilsner, just seems to have that "whatever it was missing". Can't really put my finger on it.
Then there's Shore Leave, I had always used a blend of Viking Golden Ale with whatever Pilsner Malt I had on hand for a base malt(1:1), I have always been very happy with it, howerver, I decided to change it up a bit for the NHC and ordered some Great Western Pale High Color(3.5l)...wow, I don't think I can brew this beer any better than the current batch(which in a way is a shame since between, NHC, My parrents 50th party and the six that were otherwise spoken for...I'm down to 4 bottles already!!!)

How widely available is Great Western? I think I've seen it at a couple of online ingredient suppliers but not sure.

There is a big difference between North American and European malt. One is not better than the other, but an European malt just doesn't work for an American beer and American malt just has something missing when used in an European beer.

I don't know, I've used some North American and European Pilsner malts interchangably. Not exactly the same, but, never had one that tasted "off". Most of my friends can't tell the difference if I serve the same beer made with one or the other. I like to think I can, I'm thinking Sekado is going to be my go to pils, with Rahr Premium a close 2nd. I may be over simplifying it, but, I buy my base malt by the 25kg sack(50lb if I'm using US malt). I tend to look at what I'm going to be brewing and go for the best "all purpose" I can find.
