I want to make an extract recipe that calls for 8 oz. of Rice Syrup Solids, but my homebrew store doesn't have that. They do have Toasted Rice Flakes. I'm wondering if I can substitute by putting the flakes in with my steeping grains, and if so, how much would I need?

Thanks, Ron

What kind of recipe is it? The rice syrup is not likely toasted. You might be able to replace with plain cereal rice

It's a Mexican-style lager. I'm guessing the Rice Syrup Solids give it crisp taste.

How about using agave syrup? That would be a good substitute.

A lot of health food shops will stock rice syrups. I even see it in our local supermarket in their whole foods section.

Steeping the flake rice won't convert it, you need the amylase enzyme from the malted barley to convert the starches into fermentable sugar.

That crispiness that comes from a lager is do to a lighter body, a moderately low pH, well attenuated beer and a high level of carbonation. Just about any sugar would work, but rice solids and rice in general add a nice mild sweetness to the beer. Converted rice does not attenuate as well as sugar, so it won't be exactly the same, but it would be close. Agave sugar, honey or any rice syrups would be nice, but in a pinch table sugar or dextrose would work too..
