Started with a "Pilsner Brew"...But what do I have now?

Was not able too get the temperature of 51 degrees for the Wyeast - Czech Pils 2278 yeast. Took gravity reading; it was still 1.040 SG. Fermentation never started after a week. So, I took it out of the cooler and wrap in a blanket to allow the temperatures to gradually rise. This worked for about a day as it had a gradual increase to room temperature of Approximately 71 degrees. Where it started to ferment very rapidly.

Let it do its thing for about two weeks. Checked gravity OG 1.040 now it is 1.010 SG.. Currently an ABV of 5.25.

Moved to secondary carboy to try and let the yeast settle, age and help with clarity. Some fermentation is still taking place. I am allowing it to set for another day or so. Tasted the beer and found it was actually pretty good. Holding on to the characteristics expected of the Czech hops. It had a herbal aroma and surprisingly clean flavor.

Due to it being fermented at much warmer temperatures causing a beer haze and a hard fermentation. It is a Pale beer SRM 3-4 with the standard ABV of 5.25. This puts it in the "pale-lager-family" but not sure if this would still qualify as a pilsner.

What temp did you start it at? Cold lager yeasts can take quite a few days to get going and will go 1/3 the speed of ale yeast.

As for what it is, it's still beer. :p Just because it may not conform to the style. Prolly still good

I pitched it at 70 degrees. Placed it in the kegreator. I converted an old refrigerator to a kegerator and thought I use it to keep the temp between 50-55 not knowing that the frig highest temp was 41 degrees.

Ya, most of the time a $20 stc1000 will do the trick. You can set any temp you like

I will look into it for future brews. You are correct it is still beer and actually I think its going to turn out well. Thanks for the Tip!
 
There is also the Inkbird 308 plug and play unit, with wifi I think that they are probably around $40US. I have been using one for probably 4+ years, got mine before the wifi version came out.

Not sure how you're getting 5.25%, my calculations show just under 4%.
The beer won't be as clean or as malty as a lager, but it should be fine.

It could be a pilsner. But perhaps hazy and with some new 'nuances'. Sounds like the fast ferm did no big harm, and even if it did it won't be bad.

At 41 F it might never start fermenting, but if it does it could be going for weeks. Slowly.
