Have a Hefeweitzen in the fermenter going on a week, and the gravity is still dropping. In the past, the recipe stopped after 4 days, so I left it to ferment for 8 or 9. This time, it hit 1.016 after 4 days... and now it is at 1.014 on day 9. I do not suspect infection.

I suspect measurement error (using a Tilt) but wonder if on occasion others have seen anything like this.

I’ve had similar Things happen with a few different yeasts.

I use a Tilt as well. Love it! I have been known to give the fermenter a good swirl about then .

I did that at high krausen, the tilt was kinda gunked up. Here's today's chart, this is 10 days in... still slowly dropping.

I'd go e it a day to clean up, 1015 looks like you are done.

I never trust my tilts for the true final gravity. They're always close but what I really like them for is watching activity. From my experience with the tilts and various yeasts, If you're still seeing a slow drop, you're beer is still cleaning up even if ever so slowly. I keg though so even if I rush the fermentor, I still get a really nice beer... after another 8 or so weeks in the keg.

Yup, had my tilt go up too. Bubbles are too blame I suspect. I will measure with my refractometer for a couple days just to verify.

If you keg it, it will finish up. Just give an extra few days before charging it.
