Just updated my equipment profile and general setting to reflect the new style and equipment I have.

Moved from a 3 x 15gallon eHerms, to a Brewtus 20 / eBIAB kinda set up.

I would like to apply the new default boil size / batch size / and losses to all my old beers, is there a way to do that?

first the you can set different profiles for different equipments or beer types for that matter but all you have to do is in the recipe editor, click the more button and pick your profile then save it to that recipe, also you can set a default profile for all new brews, but also pick a different one on the fly, but you have to save it in the editor for it to stay there

for clarification of your actual question in the equipment profile at the very top pick your default profile the save it...this only applies to new recipes, you will still need to save each profile to older recipes
