Hi folks, any idea what I should be shooting for? Should I go in with soft bottled water for this uniquely hoppy doppel weizenbock or should I stick with my mineral rich alkaline tap water for the hops? Or should I go with something in-between?

Hi. Schneiderweisse Hopfenweisse is basically a Hefeweitzen that's been dry hopped. Normally, a Hefe is malty and sweet beer. They bitter it more than usual, then dry hop it, with both hallertau and hallertau sephir, according to their website.

For a water profile, instead of 'light and malty' (60 Ca, 50 SO4, 85 Cl) you might consider 'light and hoppy' which has a little more Ca (75) and a lot more SO4 (150) instead. Mg and Na should be relatively low (10-ish).

That should help the hops grow their influence in the beer.
