For some unknown reason, I sparged my last mash with near boiling water. I thought my LHBS guy suggested it.

Beer came out fine, but I have noticed brutal headaches in the morning. Tannins?
 
You want the sparge water to be around 170F in the mash tun, and for me that is about 185F in the HLT.

Headaches - tannins perhaps. Don't forget to drink water.
 
headaches can also come with oxygenation which is why most commercial beers give me a hangover lol
I sparge with 170 and ph is 5.3ish

b12, alcohol robs you of needed vitamins, especially b12, take b12 complex or b12 and drink water every day not just coffee and it helps
 
I doubt the headaches are from the beer unless you're not drinking enough water. I'd expect some astringency, perhaps some haze but nothing worse.
