I have one set of quick connect fittings that are an absolute nightmare to put on and take off (I have to tap the collar with a hammer). I have soaked them in hot water and PBW thinking there was beer/wort in them, but no change. Tried some keg lube on the ball bearings with not much change. At $10 each, I hate to just throw them out. Can't put WD40 on them like with any other part! Thought about cooking oil, but that would go rancid eventually.

Any recommendations?

Either replace them with tri-clamp or get food grade grease.

It is possible that no amount of lubrication will have them operate smoothly.
