So someone(me) forgot to shut off the O2 tank last night. i have a shitty(not cheap, just garbage) reg on it and it leaks. So I came in to an empty o2 tank this morning.

For my sours i pitch sour pitch(50g) at as close to 104f as i can and then pitch fruit(4.5lbs amoretti craft puree)/voss(250g)/servo(20g) and push o2 through the carb stone. So now we get a small sample size experiment on O2 vs no O2 on Voss.

The previous batch was very close both in grav(.2P difference) and the same ph(3.5)@12hrs when i pitched it. The differences other then O2 are: the first batch i put 20g yeastx in the boil vs this batch i put 15g. First batch i put 15g servo, this one i put 20g of servo. The first batch i didnt adjust the mash ph(i noted that there was a circus of people talking to me on the brew sheet) so i just got distracted. This one i adjusted with 50ml in the first half mash which dropped the overall mash on the first tube to 5.34 and the second to 5.42. I could have added an additional 5 ml to the second tube but i didnt as i was doing 100 other things at the time.

I will post the results and differences.

The current batch is truely delishious and is selling very well.

I suspect you will see slower start to ferm, and some esters in the final from stress. Nothing fatal.
