Never done it before, but I'm going to do an overnight mash on Wednesday. Suggestions for process, temp, mill gap size, and whether to cold steep the dark grains rather than mash. Also looking to see if there is a way to ensure that I don't have head retention issues after the long mash (maybe add carapils?).
