I'm looking for some low carb beer recipes that are good! I recently found out I am Type II diabetic. I have switched to making pilsner and mexican cerveza. Both really good, but I recognize I need to be smart and try to lower the carbs. I have even started drinking Michalob Ultra. I mean, it is okay, but is not a dead guy, or Guiness, or a scottish Ale. I would like to find some recipes with more flavor (if that is possible). I love brewing, and I will continue to do so. However, I would like to keep more beer than I give to the neighbors. Thanks in advance!
 
a beer is only about 150 calories. one a night wont kill you, my wife been diabetic for 20 years. make sure you stay under 200, under 100 fasting and A1C should be under 6.

I've been dabbling with this for the last year. My basic process (suggested by others) is to undershoot the SG a bit, add a strong glucoamylase enzyme (I like Diazyme X4) to ferment to dryness and then back sweeten a little with monk fruit sweetener to round out mouth feel. I sometimes use a little more flavoring hops late boil as well. So far I've made a couple pressure-fermented lagers, Kolsch, dry Irish stout, dunkel an ordinary bitter and Gose. Not entering in competition but my buds never turn down a pint!
