Herbs, spices and flower in beer

I'm thinking about brewing a hefeweizen, but instead of keeping it traditional I'd like to give it a twist with a little something. I've got some chamomille and elderflower left over would this work? And if so in what quantities?
 
this is a very good question. there are a ton of opinions online. It would be cool if we could figure out a list to pin.
 
We have a place north of town that does a Peanut Butter Hefe with the powder. It is good.
Those beers don't use much in the way of hops, so I'm not sure about the herbs. When people play with those, it is usually fruit.
If you want an idea of how to use spices, look up a Pumpkin Beer recipe or a Winter Warmer. You need to be very careful with spices as a little goes a very long way in five gallons of beer.

Not sure about how potent Elderflower is, but ½-ounce per 5 gallons about 5 minutes before flameout should be noticeable for dried Chamomile. Be sure to avoid the Roman/English type though as it isn't as flavorful or aromatic, and tends to be more bitter.
