Finishing off a fermentation in a corny keg

I brewed a beer that is down to a gravity of 1.006, which is about as low as I want it. It's a cream ale (kind of), and I want the fermentation to stop now and clear. I thought of putting the beer in a corny keg that I converted to a fermenting vessel, and sticking in my brewmeister and chill down to 40F-ish. DO this for about a week, then bottle. Will this stop the fermenting, and will I have any issues trying to carbonated the beers in bottles after I do this??
 
What was your starting gravity, and what yeast did you use? I doubt that it will go much lower than 1.006, unless you mashed at 150 or lower. 40 might slow the yeast down, but will not entirely stop them and when the little buggers warm up they will go back to work.
