Hello brew friends.

For 4 years I have been brewing at 60 L scale, my recipes are consolidated and I feel it is time to sell my product in the market, for that I need permission by my local autoritie, and obviously a plant with all the necessities. My brewhouse is expected to be 5 bbl. So I ask you all. What is better direct fire o heating by steam? And what kind of information can you give me on this matter...

If you are doing 5bbl, direct heat will cost a fortune.

Steam requires a boiler, but will be more efficient.
 
Yep, as stated above, the initial cost will be higher, but steam is much more efficient and also your brewhouse will be much cooler than with an open burner.
 
And less possibility of burning the building down.

Just go with your eyes open! Brewing beer is the easy part. Running a business is the difficult part.

Do you expect to sell the beer to customers in your own place, or sell it for others to sell?

Thinking of a canning line? Or at least a small canning system so people can take "some" home?

No experience with canning, sorry. Perhaps some of the professionals here can comment.
