    I use a thermometer to monitor my chilling temperature in the kettle after the boil, as I recirculate during chilling.

    Do you have some tubing on your ball valve to drain your kettle? You’ll want one, so that you can get better flow via a siphon and gravity draining set up.

    One of the things that is important in all-grain brewing is your water. In extract brewing, not so much. What water will you start with? Do you know your basic water starting point? Mash pH and water chemistry will come into play now.

    I have used WLP002 the most, but I see in my notes that in 2008 I did use dry nottingham yeast at 62F and it came out great too.

    Could also try a slightly higher mash pH- I like 5.25-5.3 for my American IPAs for the best results. 5.09 seems low for a mash pH which would favor a more fermentable wort.
