12/26/2021:
Started with 8 gallons. Between mash and boil, I poured 1 gallon of hot tap water over the grains and squeezed the bag. By the end of the boil, I ended up with 5.75 into the fermenter, plus the 1L starter, for a total of 6 gallons. Poured off half a gallon to use for future starters, leaving 5.5 gallons to ferment.
OG was lower than expected at 1.044. Would have been pretty close if I hit my volume numbers.
Pitched the full 1L starter and chilled wort at the same time. Was bubbling within 12hrs or less.

Fermented at ambient in basement for 7 days. FG = 1.08. Temp ranged from 63 to 71 or so just sitting on the basement floor.
Transferred to keg and force carb'd at 20psi for three days.

Lowered co2 to ~ 8psi
