Started with 12 gallons of liquor and left 2.25 in HLT. Temp went from 154.5 to 151 during the 60 min mash. |

fermentation started by 1215 the next day. it's going very strong with 4-5 inches of krausen and frequent bubbling. |

Krausen almost reached the top of the carboy then started to fall back. Still has ~4 inches of krausen on top of beer and get a bubble every 8 seconds or so. |

Krausen seems to be getting larger bubbles or it's my imagination. The bubbling is about one every 20 to 21 seconds, closer to 20 because there was three and one minute and one second. There is still a goodly amount of krausen above the beer. |

checked the temp and it was 39 F on my sensor thermometer. lowered set point to -0.7C to, hopefully, get it down to 37-38 F.
The hops dropped to the bottom and the beer is looking good. |

huge bed of hops on bottom of carboy. next time we're going to use a large mouth carboy and put the hops in a bag. |
