Notes

Souring instructions:

  • Post-mash, bring pH down to 4.4 with Lactic Acid addition
  • Bring to 109-115
  • Add handful of 2-row (~4.5 oz) to fermentor, purge with c02
  • siphon wort into fermentor
  • sit for 2-4 days, checking pH: target 3.5
  • bring to boil to start 60 min boil w/ hop additions
