A pleasantly smooth bitterness rounded out by prominent malt character. The maris otter base has a cracker-like flavor and the cascade is contributing something like grapefruit. Still fairly sweet, however, so I expect the hop character to change. Not much aroma. The lower SO4 addition does seem to have softened the bite of the hops. It finishes with a smoother, less assertive bitterness. |

My overall impression of this beer persists, although this sample has considerably more bite on the front end than before. This is expected as the beer continues to attenuate. Notably, that biscuity finish is still present, and the hop aroma is a bit more pronounced. Perhaps because of hop matter dropping out of suspension? |

Flavor has potentially slipped past its peak. The dryness is not complementing the maltiness as well as I'd hoped. It's gotten quite bitter but is not necessarily crisp. It may be esters or phenols that I can't quite describe. Perhaps it should be fermented closer to 64 all the way through. |

Mildly bitter, with some biscuity notes on the finish. Grapefruit nose. Tastes better than yesterday's sample -- made that one had a lot of trub in it? Blowoff activity has slowed down considerably in the last 24 hours. |

This beer has fermented out nicely. The higher mash temp resulted in a more reasonable attenuation of 77%, and the outcome is that this beer is not astringent in its dryness. It has a nice biscuity, bready flavor that compliments the bitterness of the cascade hops. |
