Brewday went well, extraction from steeped grains a little lower than expected, OG off by 0.003. Hop additions directly into kettle, created a real mess when transferring into fermentor, will use newly purchased hop spider next time. |

I failed to record that I pitched a 1 liter yeast starter with 8 ounces of light DME on Thursday April, 30th. The starter fermented out in 2 days and was ready to pitch by brewday. I attribute this to a quick primary fermentation. Initial taste is good, the color in dead on, body is a bit more full than I had hoped but I will keep beer on the yeast for a couple more days and see what happens. Hop aroma is fantastic and flavor is excellent. Plan to dry hop no later than Saturday May 9th. |

Bottled after 7 days dry hop. Will condition 7 days at room temp and check carbonation. Beer smells like Sunni D, lolz! Very little initial bitterness, lots of fruit flavor, very "juicy". Still trying to formulate a catchy name for this, the first brew in five years. |

After 8 days bottle conditioning, opened to taste finished beer. Strong citrus and floral upon opening bottle. Slight bitterness, followed by smooth citrus flavor, slightly bready aftertaste. Good mouthfeel. Not as much citrus as I had hoped for, although beer is excellent. Opinions from friends range from, "Sierra Nevada Pale Ale" to "high quality wheat beer". I will adjust hop stand charge and temp, dry hop time-frame, fermentation time and secondary transfer in the next batch.
If anyone brews this, please give me your feedback.

Hey man, this was a damn good beer. Everyone I gave it too loved it. The last couple of bottles had a more pronounced bitterness than previous. Still good, still fruity but the bite was a bit harder. I liked it, from the first one to the last but it definitely turned into a different beer at the end.
Observations: screw bottling. Even with my wealth of old swing-top Grolsch bottles, it sucks. AND, the beer changes over time as the individual bottles age. My goal is to get a keg system sometime in the near future and build a keezer or some reasonable way to keep it cold.
