So I had a sample and the yeast character is pretty good. My main complaint is a low malt character and almost feels a bit thin (finished 1.020-ish though), but the latter could be because it's still carbonating.
I wonder if next time I should try go all in and do a decoction (Reading Brewing Better Beer at the moment and Strong advocates it for the style). At the very least I'll sub all the American ale (which was probably a poor choice) for Munich. |

20 L @ 1.051 w/ 0.35 pitch rate (lowest in calculator - want to stress) requires 88 G cells.
75 days old packet - est 48% viability so 48 G cells.
Want 88 G + 100 G (to store) = 188 G.
1L starter w/ Stir Plate should bring to 192 G cells. Split 1/2 to beer, 1/2 to storage. |

Not much krausen - I wonder if the viability was affected in transit. Might be worth CC'ing after a few days and doing another started round? |

First starter didn't have much of a krausen so decided to decant to 150mL, add another 250mL of wort to total 400mL.
Shouldn't change the counts too much but make sure they're active and account for if they were under |

Quite nice, but lacking in strong malt character.
I like the phenolics balance, although feedback has been that there's not enough banana and others thing less phenolics.
Cam suggested to look at just wheat and pils. Simon suggests up to 70% wheat. |

Hefe
A: spicy, clove, vanilla, banana, creamy. It has a real banana aroma as opposed to the banana lolly one. However it's a little light and could have a more malty backbone.
A: golden to copper with some retention (not bad, but could be a bit better)
F: slightly sweet malty start but with a dry finish. No distinct malt flavours. Leaves a spicy vanilla after taste. Slightly bitter aftertaste but probably not beyond style boundaries and adds to a dry, drinkable finish.
M: moderate body, smooth, no warming or astringency.
O: Quite a nice beer. I think it's a little overly hazy, but not crazily. Quite drinkable, easy to have a second. The main issue is the maltiness, which is lacking. |
