Notes

5 Boxes of Annie's Organic Graham Crackers in the Mash. Crushed.

Mashed 60 minutes. Transferred to BK. Lowered PH to 4.6 . Boiled for 12 minutes, and chilled to 85 degrees. Covered with cellophane. Poked two small holes in cellophane. Inserted a sanitized CO2 hose to purge, and vent through other hole. After 5 minutes, insert sanitized funnel, and pour at 4 Lactobacillus packets in the wort. Let sour 2-3 days. Once soured, boil for 10 minutes, at 5 minutes add 6 ounces of lemon zest, lactose sugar, and hops. Chill and ferment.
