Spin plate for 48 hours before crashing overnight. *Overnight is not long enough for this low-flocculating strain. Next time, plan for 2-3 days of crashing the starter before decanting. |

4.6 gal strike water heated to 161.1 to mash in at 152. Started at 152.4 and dropped to 145.6 over the 60-minute mash. Pulled bag, and dunked into 3.5 gal room temp sparge water. Collected around 7.4 gallons into kettle. |

Starter still had not crashed fully (26 hours) but I wanted to go ahead and pitch tonight. Decanted a little under half, and pitched about 1 L of the starter. Regulator set to 63. Foil over the carboy opening (instead of airlock) until the krausen drops. |

Bumped regulator to 75 degrees and removed probe to let the beer free-rise. Replaced foil carboy cover with airlock. |

Temp of carboy came up to about 73, before falling back to 71. House has been between 67-75. Multiple rain fronts have caused some unusually cool nights. |

Moved carboy into spare bedroom to let fermentation complete. Wrapped in a towel to hold heat and help block light and put behind the door. House has stayed in the low to mid 70s throughout a majority of the time, but still have random bouts of col nights dropping the temp to 67. Hoping this temp fluctuation doesn't affect fermentation quality. |

Plugged in space heater in the spare bedroom after the house dropped down to 66 with a cold weekend coming up. |

Turned up heater to maintain a temp around 75. Over the weekend, the heater stayed on and off, but the room never very warm. Trying to keep the room around at least 75 until weather heats the house back up (later in the week). Wrapped carboy in a blanket in addition to the towel. |
