Set fermentation chamber to 9.5C. Once wort reaches that temp, will add yeast - Escarpment Biergarten Lager.
There was no fermentation movement so by day 2 bumped the temp up to 10.5C. Still no movement on day 3 so moved it up to 11.5C.
Day 7
Gravity was at 1.045, increased temp again to 12.5C.
Day 9
Increased temp to 13C
Gravity at 1.035
Day 10
Gravity has not moved. Added a pack of Saflager dry lager yeast in. Within a couple hours gravity has moved down to 1.030.
Day 13
Gravity 1.013
Removed from fermentation chamber and added the heat wrap at 19C for a diacytal rest. Will keep for 2 days.
Day 14
Transferred to secondary and moved to fermentation chamber at 2.2C.
Gravity was at 1.011.
ABV = 5.12%
Will let it sit for 4-6 weeks. |
