On low side originally. Pre-boil gravity at 1.032, added .8 lb DME to increase pre-boil gravity to 1.040. Might be because too much wort was collected? |

Still a little on the low side for the OG even with the addition of the .8 lb of DME. Oh well.... |

Had a really hard time getting the wort down any lower than 80F, guess that's what you get for trying to brew on a summer day in Arizona. Everything went smoothly, 6 gallons of wort tranferred into FastFerment. Pitched liquid yeast into fermenter. |

Ended up pitching in a packet of US-05, the airlock was not bubbling at all and I got worried that I may have pitched the original yeast too warm. |

Okay so it was definitely fermenting... Turns out that the lid to the fermenter was missing the gasket that seals the lid so the gas was escaping out the lid rather than the airlock. With the addition of the US-05 it brought the FG down to 1.004 - guess that makes up for the low OG? |

Moved to back bathroom - too hot in the kitchen and is fluxing in temperature. Yikes! Put FastFerment (w/stand) in a mineral tub with a couple inches of water and wrapped a light blanket around the fermenter. Water is being drawn up by blanket and there is a fan in front of the fermenter evaporating the water to cool off the fermenter. Now sitting at a cool 70F. Should continue to keep it at 70F or hopefully get it down to 68F. |

28 (12 oz) bottles of the Galaxy Pale Ale
20 (12 oz) bottles of Hibiscus Galaxy Pale Ale
- Boiled 2 cups of water, added 1.25 oz dried hibiscus flower to water when it cooled down to 175 F. Steeped 15 minutes then strained. Steeped tea added to bottling bucket when there was only 2 gallons of beer remaining. |

After letting the bottles condition for 3 weeks the beer itself is pretty tasty!
Flavor: Fruity, a little on the sweeter side (may look at using C40 or lower next time or use about 2/3 the amount of C60). Slightly bitter finish, but seems normal for the amount of hops added.
Color: Pretty dark for a pale ale
Mouthfeel: Carbonation could be a little more, almost wish the beer was a little bit thinner?
Foam: Great foam retention, has a cream color too it. |
