started heating up strike liquor at 12:10 pm.
Started mash at 1:00 pm
Strike liquor = 162 F,
Strike volume = 17 qts
Mash start temp = 155 F
Mash end temp = 151 F |

used just over 4 gals of liquor for mash. performed vorlauf 3 times and had very clear wort. |

lauter took about 40-45 minutes. Bag inside igloo cooler works like a charm. nice even flow during lauter. |

added 1 oz of simcoe (recipe called for 0.5 oz) at start of boil. Added 1 oz each of magnum and amarillo at 55 minute into boil. no boil over for once. boil was kind of wimpy for first 40 minutes. turned it up to get good fast boil for last 20 minutes. |

plate chiller took temp to 80 F. took about 20 minutes.
Aerated with O2 for 30 sec.
placed carboy in fermentation chamber to lower temp to 70 F
used large hose stuck into top of carboy and put into large jar with sanitizer in it for blowoff

Checked temp and it's 68. Still bubbling ~10 bubbles/min. Krausen is starting to collapse but still present. |

I put the outside temp sensor in fermenter and it read 40 this morning so I lowered temp to -2 C. now it reads 36 |

I checked the beer and there was ice on the top of it so I changed the set-point to -0.5 C and now my sensor reads 39 F and no ice. will crash until Wed and bottle then. |

switched to 1/2" bottler and it went very smoothly. bottled 55 full bottles. has a nice crisp taste but not much smoke. |
