After boil, temperature reduced to 180 dtgrees. Amarillo, Citra, and Mosaic hops added for 20 minute whirlpool hopping. Temperature maintained at 170-180 degrees. |

After boil and whirlpool hopping, wort transferred to plastic fermenter. Wort cooled using immersion coil, then transferred to glass carboy. Yeast pitched at 68 degrees. Carboy taken to room for fermentation with temperature controller set for 67 degrees. Before pitching yeast a hydrometer reading showed specific gravity at 1.056 and alcohol at 7.5%. Actual mash efficiency was 70%. |

After sanitizing all equipment and adding Amarillo and Cascade hops, beer transferred to plastic carboy for second stage fermentation and dry hopping. Hydrometer reading before transfer gave results if 1.008 specific gravity and 2% alcohol. |

3/4 cup corn sugar added to 2 cups water, boiled for 5 minutes, then added to sanitized fermentor. Beer transferred to plastic fermentor from carboy in refrigerator to fermentor and then bottled. Bottle temperature controlled to 65-69 degrees for conditioning. |

Sampled ale on 2/28/20. Some bottles were under carbonated and some over carbonated. This inconsistent carbonation resulted from not stirring ale after adding corn sugar. In future brewing I need to make sure that ale is stirred after adding to corn sugar.

Lack of consistent carbonation will lower score at National Homebrew Competition if bottles submitted have same inconsistent carbonation as those sampled. However, ale had nice citrus and fruit flavor, ABV shown in recipe seemed much lower in taste of ale. |
