Opened beer after three weeks of conditioning and bottle. Color is good, deep brown almost black, head is a nice light brown.
Taste is nice in the beginning smooth subtle notes of chocolate and malt. Hops are subtle as well. Aftertaste is on the better side. Hoping that another week conditioning in the bottles will help smooth that aftertaste out. Carbonation is good nice mouth feel. |

OG was lower than what it should've been. Did not check for Pre-Boil Gravity. |

Added yeast into wort before it cooled down to an appropriate temperature. Was at 84 F and I think it killed the yeast. Threw in a pack of US-05 after 24+ hours of no sign of fermentation (no krausen, etc.) Yeast is now fermenting away, hopefully using US-05 won't affect it too much. Lesson learned.... |

Finally aged enough to that the bitter note on the end has mellowed out. It's turning out to be a really nice mellow black IPA. |
