So then, from my extensive reading today:

Your most well-known DIPAs use anywhere up to 95% 2-row in their malt bills. Cloudwater, for their first ever DIPA, used 97%, 2.9% glucose and a couple of acid additions! Caramel/rolled oats/lactose for body and a sweetness to help balance out the rhubarb and hop additions.

I've scaled back the hops to let the rhubarb come through - it may be that even that is too much, but the key (again from my reading) is to add barely anything to the boil - it's all whirlpool and dry. Centennial/chinook/citra is a combo I've liked in previous Cloudwater efforts too.

So, I'm hoping this will be chewy, thick, have a real knockout hop aroma and a sweet/tart balance in the flavour. Feel free to make suggestions!
