7 gallons split up as follows:
3 gallons: Wyeast 3711 smack pack and OLY Coast to Coast picked up from Jake (DC Homebrewers) was stepped up several times. 2 goodbelly shots (lemon flavor) pitched as well)
1 gallon: US-05 and Jolly Pumpkin oro de calabaza dregs
1 gallon: US-05 and Russian River Consecration dregs
1 gallon: US-05 and Oxbow Albarrique dregs
1 gallon: US-05 and Crooked Stave Petite Sour Rose dregs slurry, built up in 750 ml starter wort last month
Medium toast american oak cubes pre -boiled and added to each 1 gallon batch (4 cubes each). Handful of oak cubes added to 3 gallon batch as well. |

2nd Tasting (notes from first tasting on my old iphone 6)
Saison - noticing acidity but not sure about funk. Maybe a little can’t tell. Tastes good.
Oxbow- definitely some acidity. No real clear funk though.
Crooked stave - lots of acidity. A little bit of complexity and fruitless too.
Jolly pumpkin - some acidity. Original beer malt character most present here. A little bit of fruitless. Not really any funk.
Russian river - has acidity. Some of the original malt flavor is there. A little bit of funk here.
Amalgamation of house culture -set (includes saison wyeast 3711), dregs from first mixed fermentation sour, and C2C from saison above.) - has hops so some bitterness here. Hops really helps a lot. Would recommend bittering to an extent ~10 ibus, for future batches. Acidity here. Not much funk but definitely some character to it. |

Saison - lots of acid and lots of funk. Very thin however. Think this would Benefit from some bitterness or hops. Will consider hop tea or dry hop
Crooked stave - strong sulfur aroma. A lot of acidity. Like an acid bomb. A little bit of funk. Very tasty
Oxbow - light acidity. Still have a lot of that malt flavor. Beer is getting “sick” with a viscous/ropy consistency.
Jolly pumpkin. - very light acidity. Still taste malt flavor. Not much funk.
Russian river - thick pellicle formed. Slight acid. Maybe a little bit of sharper acetic acid. Some funk here too. |

Bottled the Saison portion on 8/13/2020 (yellow caps)
blended the Russian River, Jolly Pumpkin and Crooked Stave as 1 blend. white and yellow caps that say, "ready to drink" |
