Cereal mash was a pain in the ass, but surprisingly got really good efficiency out of it.
Hit 144 after adding grains and cereal mash to strike water. Let that sit for about 45 min. Added about 2.4 gallons or near boiling water which brought up the temp to around 154 which I let sit for an additional 15 min. Unexpected step mash! Used 8oz of the double crushed pilsner malt in the rice cereal mash. |

Bumped temp to 68 and placed the probe on the fermentor. Fermentor was showing low 70's and temp probe was in mid 60's. Krausen is starting to die down a little, but fermentation still very active. |

Krausen has already fallen and yeast cake is starting to build up on the bottom. Looks very hazy still. Giving it a few days to clean up. |

Signs of active fermentation has disappeared and the beer is starting to clear. Took readings to see SG and pH. |

Lagering in the garage around 50F. Purging with CO2 every day and it still smells sulfery. Added galatin for clarification. Will keep lagering until sulfer aroma go away or at least calm down. |

Moved keg to keggerator to carbonate. Taste a bit acidic (maybe infection?) and apple like. Maybe acetaldehyde? After taste has a nice malty/white bread character. Smells malty, slightly sharp (acidic) and slightly fruity, probably from the hops. |
