Notes

Add 3/8 tsp lactic acid to mash for 5.4 pH.
I suggest reducing the Centennial to 1 oz, or alternatively (if you want higher ABV, according to original Ugly Fish recipe) increasing the base malt by 2 pounds. Otherwise, the balance is off. In Nov 2019 brew, I actually added some malt extract (boiled in water) after a day of fermentation, to bring the effective OG up to 1.071.
