Tastes chocolatey, raisin and malt. Not a lot of hop character. Maybe a tad sweet. Uncertain why gravity hasn't changed. |

Has been in oak barrel for at least 2-4 weeks. Uncertain timeline at the time of this note. Complex flavor, with maybe raisin, plum and chocolate. This is an excellent flavor combination. I feel like boozy is a good descriptor, but it doesn't really burn like alcohol. Definitely heavy feeling. |

bourbon/whiskey taste at end, but not overpowering by any means. Not much different than before, other than it is absorbing the character of the barrel. |

Smooth up front flavor, then layering of chocolatey raisin and/or plum, then it repeats. It's boozy up front but very mild feeling. Very tasty for something that was try #1 as well as aged in a bourbon barrel. |

Put on CO2 at 9 psi for about a week then will bottle with counter pressure bottle filler. |

Bottled from keg which was set ag 9psi for at least 7 days. Bottled using counter pressure bottle filler. Put keg pressure 2psi above carb pressure, and set purge pressure to 9psi. 30, 12oz bottles were made. There was a 31st which had been filled 2/3 of the way before running empty. It was drank same night. 1 bottle left to age at room temperature as a test. There is still another bottle that was primed with sugar before being bottled. |
