Yeast starter was 100g DME in 1L wort. Pitched in dregs of 4 coopers pale 375ml stubbies on Friday night. Pitched in the dregs of 6 more over Saturday lunch to Saturday night. High krausen by early Sunday morning. |

Put in coil with 10 minutes to go along with wyeast nutrient, Whirfloc and finishing hops. Ran whirlpool output to sterilise hoses and pump c. 5-10 minutes.
Knocked out and continued to run whirlpool to help immersion chiller. Pulled and Drained hop spider after flameout. Pulled immersion chiller at 35C and continued to run whirlpool for 5 minutes. Turned off whirlpool and allowed to settle for 5-10 minutes.
Racked to fermentasaurus. No direct oxygenation but pumped into FV with splashing in order to oxygenate. Wort went into FV around 30C. Into ferm chamber set to 17C. Allowed to chill to 20C before pitching entire starter. |

Visible signs of fermentation. Krausen coming up. Approx 6-7cm of krausen with rocky off-white to tan foam and patches of hop oil and break material.

Raised temp slowly since Wednesday. 1°C rise on Wednesday evening, again on Thursday morning, and Thursday evening. Another 2°C raise on Friday morning. |

Must have had a contamination in culturing the bottle dregs. Pellicle on top of beer in FV. does not perceive as overly sour or bitter or over attenuated. Dropped temp from 22C to 1C by 5C each day over 4 and a bit days. Kegged on 6th December and carved to 40 PSI leaving gas disconnected. Sat at 40 PSI for 4 days. |
