Brewed during naptime on the stoop with propane burner. Girls woke up early, not sure if it was from brewing or laundry.
Started with 5.75 water, steeped crystal 40 as water heated up to 160 (about 25 minutes). Brought almost to boil and added all extract (NB Gold LME) with flame off. Rinsed out containers with spoonfuls of wort. Girls got up about halfway through boil. They watched Tumble Leaf while I finished up :-/. Added about 0.75 gallon of slushy frozen purified water after flameout. Brought down to 180F. Put it in laundry sink with all ice from ice maker then added ice packs when that melted. Surprisingly effective. Brought down to 110F in ~30 minutes or so. Transferred into brew bucket and put into ferm fridge set to 18C. |

Rehydrated quick. Epic Miri meltdown before church made me rush through, but probably gave it 10 minutes to sit before mixing then cooled in unmeasured spurts ending at about 69-70F. Dumped into 18C wort with no extra oxygenation other than draining from kettle on table at 110F. Raised temp up to 19C but added a second heating pad that afternoon when I saw the temp wasn't going up much. Then set it to 20C which it hit by the evening. |

Looks like first signs of fermentation began just before the 24 hr mark post pitch. Again, not a bad lag time with 1 pack of this yeast. |

1 oz Centennial (Pellet) poured straight into fermenter. Swirled a bit and later turned heat/temp control off.

Put into Keg 1 (New England ESB previously). Purged 5x @ 40 psi and left at 40psi for ~24 hours.
Yeast is not the best floculator. Picked up some chunks from the bottom of the fermentor. Very loose cake on bottom that took up about 1 gallon of space. |

Beer was pretty well carbed, maybe slightly under which is fine. Very hazy with a pronounced hop bite. Needs time. But very drinkable and delicious already. Maybe a little drier and not as hoppy/sweet as 2 hearted. Might change after hop bite conditions out. |
