Beer in the FastFerment. Ice bath took some work and 3 xl bags of ice. I believe an immersion chiller is a necessary tool when you move to all grain with full boil so that will be my next addition. Not as much boil off as predicted so ended up with 6.5 gal. Adjusted recipe to final OG reading and volume. Looks like 74% efficiency. Next time will have to double mill grains to see if that helps. |

Mash Started. Strike water at 155.Goal is 144-147 for 90 minutes. Added grains and stired to 147 and covered. At 70 min temp was 144, stirred in 10ml Ultra Ferm. |

Mash was at 144 at the end of 90 mins. Mash out at 168. Drained and squeezed bag. |

Dumped collection ball to move into secondary. Still a lot of trub and protein in cone. Will have to dump again in a day or two. Untraferm really doing its job. Wonder how low gravity will go while in secondary. Very pale, light straw color. Guess I really got a Brit. Be interesting trying to get brut carbonation by bottle conditioning. |

Bottle conditioning. Used 7oz of dextrose to prime for “brut” carbonation. We’ll see how that goes. |
