Pumpkin needs to be split cleaned and toasted @320 degrees until slightly caramelized and soft. Scoop out and put in large hop bags. Mash the pumpkin in 4 gallons of water @ 158 degrees for 60 minutes with added amylase enzyme and 1 pound pilsner malt. Use the pumpkin mash wort as strike water for main mash. Add water to reach desired strike volume.
